How often should these fluids be changed?

there is no set interval on these items, since their purpose is fluid motion not lubrication its a whole diffrent thing. As long as you never get water in it, the trim fluid will probably never get changed. The steering fluid tends to take some heat though and you should just keep an eyes on it, if it starts to turn black or burnt just change it.
