A 496 equipped boat is I'm guessing going to be 2002 or newer??
My guess would be around 65-68 mph.

One sweet looking, greating handling, smooth riding BIG PIG!
My 02 with stock 500EFI and XZ drives topped out at 74 MPH on the GPS.
I changed the heads, cams and did the ECM reprogramming and with 600 HP per side we got 80 MPH.
Now with 540 CU motors with Whipple stage II superchargers running 6.5 lbs of boost at 825 HP per side we are at 91 to 92 MPH and killing stock XR outdrives.
I'm in the process of doing a complete change over to IMCO extension boxes, IMCO HD transom assemblies with steering and the new SCX outdrives and we'll see what she does from there. If all is good we may pump the boost up.
In my opinion the 36 is way underpowered with 496's.
Does the boat have offshore motor mounts?

You have way too much time and $$$$. Once you are done, you could write a book on how to make a 36 Outlaw fast and reliable. It is a shame there is not a source for this kind of info without you having to do your own R&D.
