I just traded a 38ZR with 525's for one w/600's. Once you drive the staggered motor boat, you will not want a side by side setup ever again. The boat stays flat all the time even in rough water. Servicing the motors is a breeze becasue of all the extra space. I have a large tool box in my motor box ( 3 ft long) and still have a ton of space. You will see 87/88 in the 525 boat all day long with Merc or Hering props. 90 on a perfect day. As far as high speed turns, I drive the boat sensibly and have never had any problems.
