I thought maybe the gel coat would be more durable against the marine waters?

It is but is not compatible with the automotive paint system.

How long will the 2021 last if the boat is slipped for the season? or is trailering recommended it is a 26 foot Chris Craft with twin 350s. its not completely terrible to trailer but would like to have it slipped.

Its really not a good idea to leave a painted boat in the water. You may get a month or so till it starts to bubble. It helps if you keep the grown off but it is something you have to keep up on religiously. When i stripped the bottom paint off my Scorpion and repainted it it only lasted about six weeks till it started to go. I had planned on going back to bottom paint anyway and just wanted to see how long it would take.

That's not good really, I wanted to keep it slipped, I would have to have a hydro lift to lift it out. More expense, bang head on wall
