Vinylester will give you near epoxy like physicals and still allow you an easier finishing product. Works faster and you can use more conventional fairing and finishing methods. If its not a high demand high stress situation i stay away from epoxy, not worth the hassle. What kind of a joint or union does the scoop make with the hatch? T joint, butt joint, L joint?

Do you need to finish the outside or will it be through the sunpad?
You will probably have to radius the cutout and wrap the inside edge with a layer or two of glass. 1708 bi-ax is the only fabric you will need but a little mat is good to have on hand for surface work.
