Default newby questions for a complete hull refinish

I have just bought a project 240 sport that will be a complete refinish project. I have currently stripped all the interior and removed the engine. The plan is to rebuild the 454 and buy a bravo out drive, replace all guages for a more modern look and a complete custom interior. Plans for the hull are to completely sand down and fix some minor scratching and repaint the entire thing white inside and out and then get a full wrap from Edge wraps. I plan on doing all the sanding over the next month or two but then the question is......Should I just do a bottom/top paint combination in all white or just spray the thing with gel top to bottom since it is going to be wrapped anyway? Which is more durable /more practical?
