Budget Cat? Where to look.
 
Once I get my motors together and back in I'll be selling the boat and looking for a cat.

I'd like to get a min 25-26ft, I/O or O/B, single or twin, 75+, for approx 25K.

Is this even possible?/ any suggestions?

You can look in a crystal ball!
Just kidd'n...... I have seen some older, early 90's, Eliminators in that price range. You might be able to find a 26AO or 26 Firehawk in the low 30's

Thanks for the lead, being that I'd be new to cats, whats the difference between a full tunnel and a center pot in terms of performance/driving?

Boats with center pods tend to be a little more forgiving and have manners more akin to a v-hull when turning. Some non-center pod boats (usually older ones) tend to lean "out" on turns.
