I had a Formula 330 SS that was perfect for 8 or more people. It did 60 with twin 496's, before I bottom painted it. I would , of course, never go that fast unless i was alone or with one or two friends only. I bet the new 310, or 290 with 502's would crank pretty well . These boats are super at high speed and cruise thru chop like nothing at your most common speeds with a bunch of people.

Chaparral 285 SSi cuddy can be ordered with a 525. This boat will seat 8 easy and run mid 60s. Or go with 496 or 8.2. HO and run high 50s. My Chap 256 w/496 Mag will hit upper 50s and seat 10 comfortably. Not high performance but great boat with some sportiness. Thru hull exhaust makes it sound fast!. I know a guy who installed a Procharger & Bravo 1X and topped 70 with his 256.

Ok. Looks like I am pushing into bigger than I wanted with my requirements.
New requirements.
- Single Engine
- Needs to seat 6 adults
- Needs a cuddy and closed bow with cabin
- Good amount of stowage area (Not a fan of just throwing stuff in the cabin)
- 70+MPH
- Under 30'
A 27 or 29 Fever would be sweet, but looks like they are only good for 5 adults which is what I can do now so not ideal. A little more deck space would be nice too. 271 Formulas look nice and good space, but I heard heavy and slow.

Have you considered a Center Console? Scarab. Concept, Etc. Concept has a 30 that has small cuddy, twin 225s will run close to 70 and get great fuel economy and look sporty while doing it... Easily space to seat 8.

Hate to say it but a non open bow is going to be a tough order to fill if you're looking to seat that many adults.
Seriously, check out Sunsations! The cabin can be closed off. Plenty of room. Meets your size, power, and stowage requirements.
I had many of your same concerns and couldn't be more satisfied with the boat I purchased.
