Yes you can ground to block, on trucks they run the ground back to the batteries.
I have all the same sensors, high oil temp, high water temp, low oil pressure(set at 30psi), low fuel pressure 5psi, low ps fluid + the usual merc stuff.
They all trigger the merc alarm which also lights a pro-light. cant hear the alarm at speed can certainly see that bright ass light. Would use led now if I redo.
Also have the fume detector and auto blower
Found the NOS switches and sensors to be the best and adjustable to the numbers
You did way better than average for a first attempt.

You can ground it to the block as long as you have a clean spot that free of paint, rust, etc.
The wiring is looking good brother.
Here are a few of mine.
We make the electronics plates in house out of aluminum, carbon fiber, whatever.. That is the key to having neat wiring. You must have a good place that is centrally located to mount everything. I also find it helpful to sketch out a schematic of all of the wiring first, so that I don't forget everything. There is nothing worse than strapping everything up nice and neat and realizing that you forgot a wire.

Thanks Dan. That's why we put the pics up there.....so guys can hopefully get some ideas from them to use in their own application.
