Question on guages

On my hot rod VW I run a PLX multi gauge. I have 5 different modules hidden away and with a touch of the screen, I can toggle through those 5 readings. Its quite the nice set up as I'm very cramped for dash space in the VW so with 1 gauge, I can have up to 16 gauges daisy chained together. Draw back is, at a glance, I can't see all the diagnostics, I have to toggle through them. On that particular engine, my biggest concern is oil pressure so I use that as the default.
I personally think AFR will tell you so much about what's going on, or prevent bad things from happening before they do....

For clarity, Holley 850 carbed motor, 600+ HP.
If you look at the engine pic, the header on the right has the AFR sensor (I think??). By default, don't they get wet given the headers?
If you look at the dash picture, middle row, the second one from the left (the darker colored one) is an air/fuel mix gauge - not hooked up and I would replace to make it look right.
Everyone seems to agree with the Oil temp & water pressure.
I'm going to research the AFR gauge.
What about the hour meter. Should I change it to match? (it is original and non matching). I don't think the hours are right anyway.

Hi All,
Would like to bring this back to life because I am going to order the gauges next week.
Looking at the 3" only, the top left is depth. Are all the depth gauges generic or do I have to replace the sender with it?
Not counting the depth, i have 10 3" gauges with 5 already replaced (alt/volt, fuel, fuel pressure, oil pressure and water temp). That leaves 5 left.
1. Hour - I think I am going to replace this and save the old one.
2. Oil temp
3. Water PSI
4. Clock - for lack of anything better
5. AFR - maybe - see question below
My question is this. The AFR come from the pigtail on the headers (I think). They are old, so I'm assuming I need to replace them.
Is it that easy? replace the pigtail and the gauge and hook it up?

Outdrive temp would be cool if you can find a 3" model similar to this:

Is the wire harness missing that connects that o2 sensor to the gauge in the dash? Has it been hooked up since you owned the boat?
That would be nice to have, but theres a chance that the sensor got wet and stopped working, hence why its no longer hooked up.
For the 3 remaining I would do Oil Temp, Water Press, and Fuel Press like Griff said.
