Consider TEAGUE and PFAFF

Both fantstic builders and they both give 1YR warranties.

There is a company in Fort Lauderdale called Carolina Racing. The guys name is Smitty. He has been around forever and over the years has built many of the engines for some of the biggest offshore race teams. These are the engines he did for us. They are going in the boat today. He is the most reasonably priced engine guy I have ever talked to. Real good with working with a budget but won't cut corners. He does EVERYTHING himself. No cheap help, he is the only one that touches your engine. Not the fastest guy, but honest as the day is long. These motors Dynoed at over 1,150 each. I'll post an update on Sunday how the boat runs. Remember Lubejobs is for sale!
Carolinas number is 954-791-6867

I would have to ask how rigging could be a problem, as mercury marine will not allow a manufacturer to build a boat without their tech people coming in to certify the installation and make sure it is done to mercury specs. At least this is the case for the big engine packages
