I have a 26' cat (Eliminator) with twin 6.2's, best day, rigged for top end, 84mph maybe 85mph on GPS and no current. Summer temps, cruise gears and 26" props gives me 80mph at best. Never had a V-hull, but wouldn't you expect a sizable drop from the those numbers?
