What do you mean by "making one of these"?
Races? Key West!
Pleasure Boating? Keys if you like saltwater.
1000 Islands, freshwater, beautiful scenery and shoals to rip off your outdrive.
You WILL need a chart for either place.
I say, do them both.

I guess it depends on when you want to go.... KW or the 1000 Islands in July, flip a coin..... January, well that's another story... :D
The 1000 Islands are spectacular, but a trip to the Keys is something that stays with you for a long time.
