i would consider the environment they would be used in, fresh or salt water. and if salt how often th engines are really flushed. there are some cast aluminum units out there that will suit just fine. as will c.m.i's or stelling's. stainless tends to be a little more resistant to element than aluminum, as far as longevity.

Does it make any difference which type of CMI headers you use? For instance, are the e-tops or sport tubes designed to handle the same amount of hp? Or, are the different designs just for looks?

It all depends on how you're getting the 700hp. Supercharged?, NA?, 540 or larger block?
E-tops will work if you're supercharged and using a 502ci or smaller block.
Sport tubes are better for HP above 500hp...look what Merc uses for the 525, 600, and new 700.
Big tubes are recommended for 540ci and up sized blocks.
You can also look at Lightning headers, they are like a Stellings clone...but a lot less in cost, and they hold up well in fresh water.

Honestly, I've owned SS Headers and Aluminum Manifolds (Stainless Marine) over the years.
In my opinion I liked the Stanless Marine better than the CMI's, here's why. In the 7 years the Stainless Marine manifolds were on my boat (salt water) I had to have the system repaired ONCE. This was due to a small crack in the STAINESS exhaust pipe.
Since I've had the CMI's for 2 years I've had to have the headers welded/repaired 4 times and new tailpipes made. CMI's are usually junk after 2-3 years.
I asked my welder why? He said, although stainless doesn't rust it can't handle the constant heat cycles and constant vibrations, hence they crack a lot around the welds.
My next set will probably be IMCO Powerflow Plus.

Ok, If I have 700 hp NA on a 540 cu in motor and run the e-tops that I currently own, does anyone know how much this is hurting my HP?
I hate to purchase the pricey big tubes if there isn't a considerable gain? Thanks.
