Default Thermostat change??

Just rebuilt both motors and removed the old gils and installed new CMI E-Tops. The stock thermostat is still in place and we were planning on using it. Other than it looking like crap, what is the boards suggestions for either keeping it or replacing it? If I replace it... do I need to keep all the same cooling lines (Top and Bottom) to the headers or can I change this? With the gils these HP500's had reversion pretty bad. I'm really trying to avoid that.
