Get your tail pipes bunged and get a wide band O2 unit.
I have replaced my Holleys with Mighty Demon Marine carbs, and nobody could help me either. I bought a F.A.S.T. 2 channel System with 2 - O2 sensors. I can see what each bank is doing. My application is a N/A motor, but I started out with 85P and 93S. Ended up with 87P 95S. Still messing with it a little, but pretty happy (safe) here. Remeber, if you are NOT running power valves, square the jets. You can also call the Tech line, might find some insight there. Hope this helps a little.
