I think it's usually closest to multiples of 1/16". 1" ID is about -16. Double check your measurement, 1" sounds big for a thermostat outlet. Remember it's the inside diameter of the hose your measuring. The S/S line is kind of an overkill for that application. You could just use the braided hose covers and clamp covers that Merc uses on their motors.
I've also used "Push Loc" hose with brass JIC fittings. It's not as flashy as the S/S stuff, but it's a lot cheaper and makes for a very clean looking installation.

Now I confused I have a book at home and it says -18 is 1"
But I did double check and it is 1" to the CMI's from the stainless thermostat housing.
Any one else care to guess.
Thanks again

I used -12 from the thermostat housing to Gill manifolds. I do not think you have to go any larger. Take a look at the size of the fittings you will be threading your adapters into. The hose will not flow anymore than can fit past the restriction in the adapter.

Gary,
Where did you buy the braided hose covers you referred to? Is it called that exactly? I'm having trouble finding it.
Thanks in advance.

Kelley,
You can get braided hose covers through mail order places like Summit or Jegs. Local auto parts stores that deal with high perf parts or have a big selection of dress up items should also have them.
