Did you change anything...The Hp500 has a pcv at the base of the intake behind the carb.Does yours have pcv's ??..Did they remove your heads? to change the springs..Head gasket ??
Hey, I just noticed you are in NY. Where at? I am in NY right now and would gladly figure out what your problem is for a boat ride up here. Cool place. I am on LI right now. Be here for a couple days.

I would just change the stat...It maybe getting stuck in a slightly open position allowing constant flow to the cooler..and keeping you temps at 190

I believe the part number is Merc # 816163

Have you tested it since replacing the manifolds?

If not I wouldn't check anything else until you go for a test run. You might be worrying for nothing.

Lastly, what heads are you running and how old are they?

They removed the heads and had them cut and put new head gaskets on. Nothing else was changed.

What was the compression test #'s... Were they all the same give or take a few..Were there 2 cylinders next to eachother with lower numbers than the rest?
Could also be wrong head gaskets
