I would seal the hole first with epoxy to prevent moisture from getting into the glass or coring. Then when you install the stainless fitting you can use 5200. As I'm thinking about this, if you are planning on going fast the water may erode the 5200 maybe it would be better to completely epoxy in the fitting.

We have had this done and it should be pretty straight forward. My suggestion is to post on the Paint and Fiberglass forum and ask GlassDave for his input on the right resins/materials for the job. Are you using the Stainless Marine thru hull pick-up's?
