Default Wter temp with crossover to low

My buddy just put a crossover on his 500hp with the bypass and tnew t stat but he does have a low water pick up on the back of the transome not through the drive and it has 2 water dumps out the transome as well as going out the exhaust. his guage was going from 120 to 170 as mine will fluxuiate from 155 to 180 but always stays above 150 was wondering about drilling holes in the tstat as i did 1/8 hole in mine. Thanks

I had the same setup with a thru hull pickup, 5-6 1/8 holes and mine stayed right at 150
