Mainly the power starts laying down....then if you pull the valve covers you'll usually see a broken spring as the cuplrit. Make sure you look at the inner springs also....

I just did it. Did the head gaskets too, which would have never made it through another season on one motor in particular. It did run better, probably because I bumped the rev limiters up at the same...

Went with Isky 8205plus endurance springs on my 2000 500EFI's @155hrs and yes the originals were sagging, although they probbly would have made it to ~200hrs.
