At 3k mi. these engines are a long way from being fully broken in. They will continue to make power and 'loosen up' well into the 12-15K mi. mark. It's a good thing.

That 6.0 is a thirsty motor. What you are getting now will get a little better as you put on some miles, maybe 1-1.5 mpg increase. Ultimately you will probably see 11-13 city/14-16 hwy.
