Default My new to me 1972 18' Gran Sport "Super bee 3" Starting rebuild, Any tips?

Bought a 1972 18ft Sutphen that came with a 340 "super bee 3" engine. Engine has been "rebuilt" once before. I bought it in pieces. Has 360 J heads not sure if it's a forged crank or cast, Edelbrock 'street tunnel ram' manifold with two Holley 600cfm carbs (vacuum secondary’s). Not sure what cam was used.
Never rebuilt an engine let alone a marine engine so any help would be greatly appreciated. Have most parts on shelves and in the process of cleaning/paining.
Just got the block on stand and ready to clean by hand. Low budget all the way (I’m a blues musician) Previous owner said he had it cleaned by shop but it looks dirty to me. Any suggestions on what to lookout for or any cleaning tips? Oil/ water passages, gasket services...

After you get the long block together, sell that Tunnel ram and dual quads for a Performer RPM intake or equivalent, that is the wrong setup for that application.

IMO-jet hot ceramic coat that intake and put two of these on it Holley 0-9776 4160 Dual Quad 450 CFM 4 Barrel Carburetor; it will look cool and run pretty good too. Small block Mopars make good power with a decent head.

I've been researching this combination, 450 or even 390 cfm carbs seem to be best with my 340.
Any idea about what cam I should use? My target is 400hp would like to push the boat north of 60mph.

Once you start getting around 60mph that outdrive is gonna hold you back. They are great up to 60-65 then they punch a hole in the water big enough for you prop to fit through.

Thanks Good to know. I have no experience with out drives. I'm guessing for a boat this size 60 to 65 should be plenty fun and somewhat stable? I've got to spend some time researching and learning about my Volvo Penta 270 out drive. Any ideas where to look?
