Go all the way back to the transom bulkhead fitting and install an NPT plug. Completely remove the pitot tube, which will reduce drag. Easiest to leave the transom bracket, but if you remove it, put the bolts back in with lots of 5200, or fill the holes in properly.

the tube goes straight into my outdrive. Bravo one

As cheesy as it sounds most people just plug the pitot tube with a screw in plug with silicone on the threads. Easy and done.

Be sure to do it right the first time. I bought a Donzi last spring that has a GPS speedo. The previous owner did a poor job of blocking the line for the factory speedo. It took me 2 trips to the shop @ $115 per hour to figure out why my bilge had water in it. To fix it the right way (in my own opinion) you should cap it off in the dash and also the drive. Since the correction I am dry as a bone.

I cut the hose off about three inches inboard of where it came thru the transom assembly. Slicked up a stainless machine bolt with boat life and inserted the bolt into hose. Added two sip ties to clamp it. Dry as a bone.

There is a small hose on the leading edge of the drive bewteen the upper and lower halves. That is for the speedo and you can just remove it or disconnect it. There won't be any pressure to the main hose that goes to the dash then. Then just plug the speedo hose behind the dash with a screw.

1/16" NPT.
Remove the hose fitting and cap the transom fitting
