Done properly as mentioned and avoiding any moving parts can be just fine. Just a little more finicky when it comes to detailing to keep looking fresh. Just not my personal preference. I've come across some where no precaution was taken what so ever and a mess to deal with especially when it comes time for rebuild. Soaking in carb cleaner just makes a mess and takes longer and have to be extra careful during assembly. I admit done right they can look nice though.

I've had to rebuild a couple painted carbs over the years and before I soak them and still together I hit it with spray on paint stripper from Depot and wash off the majority of the stuff. Don't like the way the paint gums up the soaking juice and leaves everything with kind of a sticky film on it.

I don't see the big problem with the painting of the carbs just mask them off good top and bottom. I would leave a dab of grease on the cams no paint will stick and maybe a drop of oil on the throttle shafts at the base plate..
