My understanding, the down side of cats is when it's rough, you can't run them back home at 30 something like a Vee. You have to run them faster to get the air flow through the tunnel and create the pressure and lift. That means higher speed and a bumpy ride. Sounds fun but could get annoying whereas a Vee hull, you can keep going on a slower planing speed and use the hull shape to cut the waves.
Depends where you boat of course. I've been considering a cat myself but it's pretty rough here and I'm not keen on blasting over 4+ footers at 70, I'd rather ride them out gracefully at 30!
