As a very general rule:
Props turning in raises the transom when on plane compared to turning props out when lowers the transom and raises the bow.
Fountains are normally set up to turn in as tuned with the props and hull.
Other boats are normally set up to turn out, also as tuned by props and the hull.

To expand a little on this Reggie started turning the props inward (for the reasons you stated) on the high powered turbo boats back in the 80s when 100mph was king of the hill. The early boats had so much lift in the pad for running 70s/80s the nose resisted lifting at the higher speeds. Standard powered boats still turned outward.
Some side effects are if the boat tries to chine walk the outward turning props help stabilize it and inward turning props make it worse. Also, around the dock the boat does not twist on its engines as well with the props turning inward.
Cats have to be especially careful running the props inward; if you launch and come down tilted on one sponson a high pitch prop will paddlewheel and try to corkscrew the boat over on its back.
