I have a 6500btu carry on window unit. I use the EU2000i for it as well. Its barely enough juice. 7K btu may be pushing it. You will have to use your shorepower cord and a pigtail adapter to get the amps you need, not an extension cord.
If you were closer, I would let you borrow mine to try it. You really can't find them too often for less than $979, and thats mail order/internet (+ shipping). I paid $999 for mine wholesale.

Ive worried that tied up in a party cove, with all the boats around it would be too loud or smelly.

We have tied 4 boats together for the night, 3 of them with EU2000i Inverters on the swim platforms, with NO issues. (Two 37ATs and a Huslter 388 with Hondas, and the other was a 37AT with engine room mounted diesel genset). As long as it does not run a high speed idle the whole time, a tank of fuel will last the night in most cases. They do not stink. They do not get hot. They are quite quiet. I looked into a couple other small sets like the EU2000i, but they were all louder and heavier, and none had the variable idle technology. The vibration dampener rubber feet do their job well. While laying in the V-berth with the AC running, you cannot hear the EU2000i on the swim platform, nor can you feel any vibration (maybe slight vibration in perfectly stagnant water, but we were on a river).
Honda did this unit the right way. Several of the VA boating community use them for just this setup with no issues. I always keep mine fueled a ready all winter too, just incase. It will run a space heater nicely.

Got mine a few months ago for $875 shipped to my door.
I have a 7000 btu AC unit. It runs that, my fridge, and battery charger. 1 Gallon of gas lasts me about 6 - 7 hours.
