Used 28'-32' cats with decent (relative) cabins
I'm itching to go back to a cat
Problem is, my wife loves our 28' Pantera which we've had 3 seasons. Our previous boat was a 25' Daytona which we also ran for 3 seasons. We boat mostly inland lakes, so really the 25 was big enough for the waters.
I'm thinking I can reach a compromise though if I get a cat with some type of lounge/storage/sleeping thing going on, somewhere near what the Pantera offers. My wife is less than 5' so getting around in the cabin is not too much of an issue, I'll gladly live with less room as long as she has a place she's good with.
I'd consider a big single (800ish) in the right boat but would probable go twins.
The Spectres and Skaters appear to have no cabin or real lousy access, the 31' American Offshore might be the other end- ideas or boats to avoid? seems like 90+ mph on mild power (aside from the big single aproach) for $80-110k is there to be had. Oh yea- she's going to want a pleasure hatch vs a race hatch w/scoops
I'm ruling out bigger boats due to the size of my slip/lift and the bigger boats can get "Beamy".

Express ( or Ocean Express) has the biggest cabin space. very robust boat that runs well in big water. Not a lightweight though.
Call your insurance agent first. The word "cat" is insurance kryptonite these days.

If you want a cabin, Skater, Spectre and Motion are out. From what I have heard, the AO's are heavy boats and they take a lot of power to get them moving. I would stick with Eliminator - the 28 Daytona tall deck has a decent cabin, plus a great ride IMHO for its size. Match it up with a set of 496 HO's, boxes and CMI headers and you're over 100 mph easily.

I always liked this cat, may be too big though.

The 28 daytona has a lot of cabin space, the only thing lacking is headroom which is going to be true of any cat in the 30ft range. My cabin has AC and I had a flatscreen tv with surround sound in it but I took it out for lack of use. The AC works great though, I have even spent a number of overnights on it with my girlfreind. Mine is in the classifieds if you are looking.
