280 is too hot and if you are running a conventional oil you are risking engine failure. Even with synthetic you are shortening your engine life. No question the high temps are causing your low oil pressure. You likely need larger oil coolers but first I would check to see if you aren't running lean carburation. That sounds like part of your problem. That oil sounds too light to me. What kinda motors are they again? I think I would recommend a 20w-50 or 15w-50. I would recommend the AMSOIL Dominator 15w-50.

I agree with everything said, but particularly PatriYachts comment on checking jetting in the carbs. Amazing the impact lean calibration has on oil temps. For me with flat tappet cams I run Rotella T 15-40 and have had good luck for 4 seasons. It's a lot less expensive than sythetic as well.
As far as 20psi hot after a hard run and idling in gear, no problem. As long as you are 50-60psi WOT.
