OT: Anyone have a recipe for spoonbill?
 
My captain brought some spoonbill steaks back from LOTO last week and he want's me to cook it. I figure I'll grill it and throw some garlic and lemon on it. I have also heard cut it up in pieces and cook it like shrimp and dip it in butter.

PS. a spoonbill is a fish.

You're on the right track.

Grilling is definately the way to go. Lay them out on Aluminum foil, place thin lemon slices on top of the fish(not just lemon juice but the whole slices) with a few pats of butter. Season with what ever you'd like and double foil wrap them tightly.

I usually put a little garlic in the mix with fresh chopped parsly, a hint of oregano a little black pepper and on occasion a bay leave.
(Discard the bay leave when done).

Grill until done...Perfect every time. :cool:

Thanks daze,

I know spoonbill are only in 5 rivers in the US and Fla doesn't have one....where have you gotten spoonbill at?

Hey TFLB,

You're right...Actually, the spoonbill we caught and ate was in Texas. I couldn't tell you where anymore as it's been ages but it was called paddlefish by the locals. We were camping and it made for some awesome campfire grilling. :cool:

I think is goes something like

Bring large pot of dirty water to a simmer, add some navel lint, dandylion leaves, and a small container of Garlic. Slice the fish into 1 inch cubes and add to pot. Let cook for 6 Hours, the whole time stir pot. Then remove the fish and discard in trash can. serve soup warm and perferbly outside!!
