You can buy a full RGB LED setup and do any color you want. Cost less than $30.

What would a good wattage be?

You can do just about what ever you want with this stuff. In the cockpit I see no reason to need waterproof.

RGB = color mixing has three colors on the LED that mix to make any color.

Whatever you use make sure its indirect and you cannot see the actual light source. In my Scorpion I cheaped out and got a half dozen or so of those foot long 12V fluorescent work lights and hard wired them in and mounted one under each bolster and under a couple other pockets and ledges around the cockpit. Looked great lasted as long as I had that thing, people always commented on them. I prefer white

These things :D

Why not? I can't imagine a boat it wont work in. Stuff is small and flexible and bright. I don't see why you could not use the stuff to convert what you have now.

Got any pictures of the cockpit.
