Major Truck Stops usually have hotels around in the area, what I do is usually when pulling off, I search for hotels in the area, then use the satellite over lay to check the area around the hotel for large area parking. Usually while I'm fueling it works out pretty well.

My own eyes is usually the only thing I'll trust. I'll pick an exit with a lot of hotels, sometimes using the GPS to find one. Ideally, I like finding somewhere I can park right in front of the lobby and not be in a fire lane. I'll tip the desk attendant to keep an eye on things.

That does not always work though.
One OSO member had the same truck, stolen twice, from the same hotel, same parking spot...
...in South Carolina. It was just the truck though, and was recovered the first time, Second time, never seen again.
Turns out the hotel clerk was tipping off the thieves.

When you get down here I know of a great little place in Cape Coral called the Smallwood B&B and Marina. I think you might have heard of it.lol

I normally like to push it pretty good, but eventually wife wants to stop.
During summer months, I've pulled into Wal-mart lots and slept in V-Berth.

For fuel I go to the big rig lanes. I use Pilot alot. They have a pump start card for RVers. So you can put in as much fuel as needed, then go in to pay.

I like driving at night and sleeping during the day. Less traffic on the road and the boat won't be sitting in a lot at night. And most hotel lots are empty

That's what I do or if I'm alone pull into a well lit rest area and take a couple hours and then continue. I find the bigger rest areas have Tooper patrols at night, so they're safe. I've been trailering my own boats around the country since 1983, never had a problem. I usally pull into a motel late at night 11pm or later so if the lot isn't full it's not going to get full and park somewhere toward the front.
