I'm very confused. The picture on the trailer shows the two Verado's located in the Port and Center Mounting positions, with nothing mounted on the starboard side. Are they hanging a 3rd engine on the boat?

The motor is hanging from the A frame out of the way while they were probably redrilling the transom.
If they were installing a 3rd motor why unbolt the outside one.
You can see the lines are disconnected.
I would be surprised if they were installing a 3rd motor after spending time on set up to get to 111mph.
You would install the motor first.

IMO I do not think 116 is an everyday number with people, fuel etc. However it is a very nice package and look forward to seeing it in person after the shootout down here.
I wonder what the tunnel width is compared to the 318 widebody and the weight. Looking at the pictures I think the 318 has more freeboard.
It would be fun to work on Steve's boat to see what we could do. I would not be surprised to see a standard 308 run close to 120mph in the future.
Going to be an interesting winter

I was thinking the exact same thing. I applaud the idea of trying differents set-ups and seeing what truly works.
