With respect to the Sunsation I demo'd one at the Lake of the Ozarks a few years back before I bought my current Cig, LOTO is a washboard on busy weekends and at 25-30 mph my wife and daughter got douched by water over the bow when they were on the sun lounger. Has to do with the rake of the boat,(so I was told) and I have heard similar experiences from others. That being said this was a couple years ago and the I don't know if there have been design changes, however its something to consider given your 80/20 aspects. From what I saw the Nor-Tech fit n finish was nice, I think you will find the used pricing on these models will tell you what you need to know about quality and this coming from an owner of a Cig CC.

I spent a lot of time on a 35 statement with 350 verados. Great boat, great ride, well built, significantly cheaper than 340 nor tech. I wouldn’t shy anyone away from one.
I have not been in a 340 nor tech to compare the 2.

I can't answer your question directly, but we've also looked at both boats. My wife can't get past the lack of lounger seat and little to no storage (i.e. under console bedding, head, cabinets, etc). The Statement is a very good looking boat, and have come a long way with their graphics package.
Also there is absolutely a head under the Console on all Statements, always has been but there is no option for bedding unless you want a 38 cuddy.

35 Statement with twin 350's is great. We just were on one all day on Sunday and really it is a "know what you get" package. It rides smooth, it is dry, fast enough, and really just checks a lot of boxes of a boat that you can always go out, use, and not really worry about.

The main thing that stood out to me on the Statement was the front bolster seating. I don’t believe there was any separation in the base or seat back for the two or three people that may occupy it. Was completely flat. Not sure if that is a good or bad thing while running. Nate?

Most all keep it open for seating up to 3 as you said. However I have seen it have arm rest, a console, and more added in that space. The front bolter and seating area for the driver is not only changeable but move able as well for people. I am sure if you really wanted they would even do standup bolsters like the older Donzi ZRF if you really wanted but that would take the rear lounger out of it I am pretty sure.
If I had one "complaint" about that area is you really need to stand to see over the bow even if you are tall, that is more do to the windshield though.
We always stand while we run and never had a prob but the few times I recall sitting and running it was nice too, really that is only done when it's dead flat out and that isn't too often here.

Front bolster is one of the things that is "custom" to the buyer.
Most all keep it open for seating up to 3 as you said. However I have seen it have arm rest, a console, and more added in that space. Thank you for the response, I have a family of 7 total, 5 kids and me and my wife, I only know of statement boats because I have seen a few from the beach in St Petersburg, they look nice, and Nor-Tech from a few articles I have read, having no experience with this size boat the feedback has been nice to hear, very much appreciated
Statement is built here in St. Pete. The owner is amazing and I am sure you can tour the shop if you need some more info to help you in your search. they are off 62nd ave in St. Pete.
