I like the sound of it, but i don't think I'd like to actually have a car/boat with it! :D
From what i've been told, basically the tuning is off on the engine and the motor is cycling from rich to lean.
On a carb application ive been told its cause the carb has not been boost referenced and its screwing with the power valve.

Power Valves don't open at idle , and Rod's motors back in the day at Pro Tech Dyno Shop were definitely B@@ST reference 3 circuit

I added timing with the "button" ....that adds rpm , Holley sees that and closes the IAC/drops timing .... rpm falls too low, Holley tries to get back to commanded idle rpm opens IAC and adds timing , over shoots ... and repeat .
you can see timing and iac counts in the vid. (yellow is timing and to the left is IAC count.)

I Love the sound of a healthy V8 but that Rev and die not so much and to me most Harleys sound like a lawn tractor with a bad muffler , reminds me of the kids who put Cherry bombs on his grandmas 6cylinder Nova and thought it was Badazz

I'm a little touchy as I have some mouthy little fatherless bastard neighbor kid continually revving up his turbo Subaru at all hours of the day. Damn thing sounds like a 4 cylinder with 2of the plug wires switched .
