I am a dealer for TEC infrared grills. Visit www.tecinfrared.com These grills operate different than all other grills. The website describes the technogy so I will just describe the real world stuff. Viking and others, you cook with the lid shut hence a dry environment surrounds your food pulling the moisture out. A Tec gets so hot that you leave the lid open. Bear in mind home grills shrink food and turn it black. Restaurant grills have no lid and naturally use higher heat burners for better flavor.

Trust me you do not want a Viking. We deal with about thirty appliance manufactures and they are the worst as far as customer service goes. I would personaly reccomend Wolf but Thermador and Dacor make decient grills as well. I have not seen Andy's grills but they look good and I like what I here.

The DCS grills that have the electric ignition have been good the eariler units with the rotary sparker ignition had there share of problems.

When you visit www.tecinfrared.com check out the Cherokee. It is a portable great for overnight boat trips. I can offer those for around $450 and maybe less depending on quantity. Retail is over $600.
