liquid: I wondered that myself. It seems most of the product we produce (prime, that is) is shipped overseas, Japan and the Pacific rim in particular. The remainder is usually sold to the restaraunt supply business.
The sad thing is Prime beef can sometimes be discounted in the states, as the general consumer tends to think of marbeling as unhealthy fat, and therefore will tend to coose even a select steak over a choice cut.
We have been conditioned to beleive that fat in any form will kil you instantly
Not so. See many fat Japanese people? i think it's the portion size, not content, that is the problem.
If you know anyone in the restaraunt business, most suppliers are able to provide prime meat, although it is a special order item.
I can get prime whole strip loins, but i have to buy a whole box (100 or so pounds I think) to get it.
