MY SUGGESTION:
Ingredients:
4 - 6 fresh pigeons
2 cups White Zinfandel
1/2 cup white rice
1/2 cup wild rice
1 onion
2 stalks celery
2 can chicken broth
2 oz Pine nuts
Butter
Cilantro
Shallots
Garlic
1 apple
Smuckers strawberry jam
2-4 Jalapeno
Instructions:
GRILLED PIGEONS (use a minimum of 2 pigeons per person)
Pluck pigeons, leaving skin on. Marinate pigeons in white zinfandel for an hour. Be sure not to over marinate when using wine. After marinating, lightly spray pigeons with Pam and grill. Cook on both sides until juices run clean.
STRAWBERRY JALAPENO GLAZE
In a sauce pan add 2/3 of the jelly, 1/2 cup of white zinfandel and 3 diced Jalapeno's and simmer to reduce and allow alcohol from wine to evaporate. While sauce is reducing, sauté 1 tbls of shallots and 1 tsp of garlic in butter. Add shallots and garlic to sauce and reduce to thicken.
RICE MEDLEY
In butter lightly brown pine nuts - once brown stir in celery and onion. After celery and onion are slightly tender add in chicken broth, rice and cook in oven at 350 for 50 minutes.
APPLE SLICES
Slice apple in 1/4 in wide slices, brush with oil cook on hot grill to make cross pattern grill marks.
PLATING
Spread out a good portion of rice medley, fan out apple slices and place pigeon pieces on top and coat with glaze. Garnish with cilantro and enjoy with the balance of the wine.
