Head Gasket Thickness?

Ok I have ordered vortec heads for my 1989 small block chevy. They are 64cc. I don't know much about quench and compression. I can turn a wrench though. I don't know what thickness head gasket I should run to get max performance, and run 87 octane. There are so many different thicknesses. I will be using the stock camshaft. Can somebody please tell me which ones I should buy?
