There are no stupid questions: Just a lot of inquisitive idiots.
But seriously folks; the crate engine threads in the tech section should answer your questions on those listed above.
As for non jacketed headers, they would get too hot and potentially ignite something in a closed engine compartment.
Even open engine compartments on jet boats use water injected exhaust to cool the pipes somewhat.
Now be sure to tip your waiters & waitresses, I'll be here all week.
