OK, I got the gauges, now what should they read?

I`ve got the engine out now and have purchased fuel psi gauge, oil temp gauge and water psi gauge.
I know what my fuel pressure should read, but what is normal reading for OIL TEMPERATURE? What is the range, when is it hot enough to hammer throttles and at what temp is danger zone?
OK...what should my water pressure read at idle and what is normal at cruise speed (3500 rpm) and what is normal at WFO (5500-5800 rpm) ?

Re: OK, I got the gauges, now what should they read?

You want oil temp to get up to 212* to burn off any condensation in the oil at some point. Over about 260* would be too HOT.

H20 pressure is only a couple lbs at idle. At WOT, you do not want it over 25 lbs. 15lbs at WOT is plenty.
