Oil Temperature on a 500EFI

What should the oil temperature be around on a 500EFI? Also should the temp fluctuate at all?

FYI- I called Mercury today to find out.

Oil temp - 180- 240 if you hit 280 cruising you should get concerned if you hit 280 running WOT don't worry to much.

Water Temp 160 -170.
