removing center engine

what all is involved in removing an engine in a boat rigged for triples to make it side by side twins? the boat is a 42ft cigarette revolution 1990. we have three 900-950hp procharged bbc, depending on boost we choose to run. the boat has beefed up bravo xr drives by billet marine. is it going to be harder on the outdrives due to the load of a 15-16 k pound boat being pushed by two drives instead of three? is has external lathem steering. what about fuel, electrical? we plan to keep the gages for the center engine in tact, as well as the three engine controls, and third ignition switch. what would be approximate speed loss as a percentage wise? we were hoping for 100mph before with triples.....hmn....i no its a crime....
