Where to start?? Picking up an 85' sitti

Boats been sitting stored since 98'. I'd like to go through the whole boat. Willing to pull motors etc.. Where should I start, what should I do? I'm new to this performance thing so I figured I'd ask the experts.

Also, how would I get rid of a hook in the transom. It doesn't have one, I'm just curious. Looking for knowledge

if it doesnt have it dont worry about it worry about the other issues such as fuel, carbs ect

The one motor runs, should i run it outta fuel, dump it. whats recommended. Like I said I'm new to this. Just want to do things right

get rid of fuel in boat, rebuild carbs
