Can you explain why you need a reservoir can if he is running 2 cylinders?

What does it do? again, sorry if I sound ignorant, but I'm new to hydraulic steering in general, and have only researched assisted systems. I thought I had a good handle on how they work, but now this is new, and I can't seem to find any back threads, or anything on the web.

I run the K-5B cylinders and they are seriously stout...I am running 850 HP to 90 mph and have never had a hiccup...I also use a Charlynn helm 145 cc and that gives me 3 turns lock to lock...I love the system and it is run off my power steering pump

The bottom part of the can is the bleeding and relief valve . The brass part.
