if you only have 2 hoses going to the manifolds and none going to the riser then this woul be the one i would use and have used..

What should the water pressure be at idle? My gauge is plumbed into the top of the intake not sure if that matters

i have no ides what your set up is and they all vary from boat to boat. but their is 2 npt threaded ports for your coolent temp and you couse the other for your water pressure gauge.

Idle water psi is 0-5# on pretty much all boats. Idle water psi really doesn't matter.
Its the max psi you see at WOT that is important. 20-25psi is ideal for WOT.

If you want the above style thermostat housing, but in a stock merc version, I have an extra one laying around that is in really nice shape. It's not all chrome and shiny, but it's not corroded or anything.
