water temp / oil temp??
 

I have a mild built 454 that I got to take out this weekend. I can't get the water temp above 100 on plane but off plane it goes from 100 to 190 and back to 100. On plane my water pressure is never above 20psi. The oil temp won't get above 160 even after running at 3000 rpm for about 10 minutes. I am running a crossover and a 160 deg thermostat. I have the water crossover lines on the intake also. I have an hp500 oil cooler also. any ideas?

You need an oil thermostat to help you to get oil temp. You want to be able to get the oil temp up to or above the boiling point of water (212 deg.) when running hard so you don't get any condensation in the oil. You won't make that kind of temp at lower rpms, but you want 200*+ at upper rpms.
Sounds like you also need to get a better bypass to control the water temp at idle. It should not spike like that at idle. You can install a larger bypass hose so the water has somewhere to go when the thermostat is closed. This will also help add some heat when running.
