Typically they are done in 1" NPT. That is roughly the same size as 1 1/4" hose. If you add ball valves, be sure to get "full flow" ball valves. CP Performance has some nice SS full flow ones. I think they are about $60-65 each for 1" in SS. You could also check McMaster Carr or Fastenal.

I want to say that you are right on this double clamp or rule of thumb thing, but when you actually have one of those other clamps in your hand and you can see the quality of the clamp...you will see what I mean when I say that you will only need one clamp per connection. You can actually tighten this clamp down so tight that it will cut the hose off.

I always found it funny that the suction side of a raw water system required two clamps but yet the pressure side only requires one.
