Fuel/stumble issue..

So every now and then, after running my boat wide open, then come back to like 3000 rpm, then back to wide open it will give me a cutting out, stumbling issue, like it will be wide open throttle, but it will cut back too 3000 then back to 5100.. But if I go back to like 3000-3500 it runs just fine. Its like its running out of fuel. I have a 502 that was a mpi, but I swtiched it to a carb. I put a dart intake, and a 850 holley dp. I just used the factory sea pump/fuel pump combo and plumbed the carb off this pump. I have 7 pounds of pressure at idle, Im not sure what pressure I have at 5000 as, I cant really pop the hatch at 70 mph..Does anyone think I have a fuel starvation propblem or do you think there is maybe oil in the fuel from that stupid designed fuel/sea water pump..OR do you think maybe its colapsing the fuel hose??

Put an electronic gauge on it, cheap insurance. That's what I'm doing on mine.
